Gastronomy
Canary Island cuisine combines traditional Spanish food with African and Latin American influences. There are some dishes that have been imported from the Mainland, but the true flavour of the Islands can only really be appreciated in the Canary specialities, which consist of a wide variety of vegetables, fruit and fresh fish, normally forming part of lights dishes, that are easy to digest in a warm climate. Small boiled potatoes ( "papas arrugadas" ), eaten with their skins are also typical on the Islands. They are complemented with Canary "mojo" olive oil paprika; and "mojo verde" is normally used to accompany fish dishes. "Guía" goats cheese is also recommended.
If you like fish, you wil be in paradise on the Islands. The most typical recipes are "Caldereta", a sort of fish soup, and "Sancocho canario", the most popular island dish that consists of salted fish with potato and yam stew, served with roasted maize meal and "mojo".
The most popular dessert is "bienmesabe", a mixture of honey, almond cream, eggs and rum. In addition, you will also find a wide variety of tropical fruit such as mango, papaya and avocado.
